Seafood Lasagne

Finding a dish that the whole family is happy with can be very hard indeed; especially when there’s fish on the plate. However, mixing fish into a tasty lasagne will be sure to satisfy even the fussiest of eaters. So get the cookware at the ready and get prepared for a great family meal.

Ingredients

  • 12 dried lasagne pasta sheets
  • 225g (8 ounces) cod or other firm white fish
  • 350g (12 ounces) smoked haddock
  • 175g (6 ounces) cooked tiger prawns, cut into halves
  • 1 litre (4 cups) semi skimmed milk
  • 2 bay leaves
  • 75g (3 ounces) butter or margarine
  • 75g (3 ounces) plain flour
  • 2 level teaspoons dried marjoram
  • 2 level teaspoons dried parsley
  • 2 ½ tablespoons tomato purée
  • 225g (2 cups) coarsely grated cheddar cheese
  • Salt and freshly ground black pepper

Method

Oven: 180ºc / 350ºf / gas 4, pre–heated

Fan oven: 170ºc

Cook the lasagne as directed on the packet until it is “al dente” Drain and rinse well with cold water.

Put the fish in a large covered frying pan on the stove top with 125ml (1 cup) of the milk and the bay leaves. Cook gently for 5 – 8 minutes until it is tender, When it has cooled a little pour off and retain the milk. Remove any skin and bones from the fish and break the flesh into flakes.

For the sauce melt the butter in a large saucepan over a low to medium heat. Stir in the flour and over the same heat cook, stirring until the “roux” is pale golden in colour. Remove the pan from the heat and gradually whisk in the milk including the reserved milk.

Return the pan to a medium heat and whisking continuously bring to a simmer. Add the herbs, tomato purée and all but 2 tablespoons of the cheese. Simmer for 2 minutes, seasoning with some salt and pepper.

Spread 6 tablespoons of the sauce over the base of the lightly oiled dish. Add one third of the lasagne sheets in an overlapping layer. Add half the flaked fish with half the prawns, season lightly.

Spoon over 6 more tablespoons of sauce then repeat the above layers once more. Cover with the last layer of lasagne and the remaining sauce spreading it evenly. Scatter the reserved cheese over the top.

Bake in the oven for 25 – 30 minutes, until the top is golden brown and the sauce bubbling.

Serve straight from the dish with a green salad and crusty breads.

One Not-So-Fine Summer day

It is important to take precautions to ensure a safety travel specially if your traveling on the road. And this was what hubby learned on one summer holiday we had. He didn’t check the car before we set out to our journey, which was a very careless decision on his part. We were traveling back from two day vacation when he heard a loud bang and  the car swerved to the right lane. He stepped on the brake and slowly parked the vehicle on the shoulder road. One of the tires was blown. Luckily it was a holy week and there were few vehicles on the road or we might have gone into more trouble. And fortunately too, there was an RV parked there and helped us. After a few exchanges of courtesy the owner told us about their vehicle insurance that in case they encounter an rv travel emergency while on the road, an assistance will come their way with just one call, so they are not worried even if traveling for days.

Rare Movie Date

Finally we were able to watch Angelina Jolie’s  movie ‘Salt‘ at home, a very rare occasion that me and hubby would sit and relax to watch a movie. We don’t have cable connection anymore  and have no plan of getting one in the near or far future. Internet connection is enough to keep us busy. Younger son brought a copy of the movie in his usb which he got from his classmate. He regularly bring home copies of new movies but some of them are not our type . Since we both love action movies as we find them more exciting to watch, even when we were still dating moons ago, we didn’t watch love story movies, it was always the adventure and full of action movies for us. lol.

So last night we really stopped what we were doing, I shut down this computer and so was he. Younger son took over the manning of the shop. Hubby even bought ‘sitsirya’ (junk foods) at the nearest neighborhood store to complete the ambiance, coz I told him we should have popcorn.  hahaha. We really enjoyed our movie night and as always got star-struck with Angelina. lol.. I’m planning to do it more often to break the routine. We seldom leave the house together, it should be me or he as nobody will take care of the shop as young son goes to school everyday and the older son works at graveyard shift in a BPO company and sleeps during the day.
